I was also going to mention the plastic wrap. That helps tremendously to keep the cookies in place. I think the other key for me is the right platter size. You might want to try using a smaller platter (a clear one or a white one) so that you can overlap cookies and still have the platter looking full. Your cookies look great, so whatever you decide, it will be a great display!
