I recently made sample California-shaped cookies for a client. They are simply flooded with one color of royal icing (RI) and then a tiny heart over San Francisco. When the cookies dried, they were slightly warped upwards on each end . . . not perfectly flat like they were when I iced them. I'm going to experiment with a thinner layer of icing but other than that I don't know what to do! Any ideas and experiences like this? I need help ASAP. I'll be preparing 300 of these cookies beginning Tuesday. They can't be warped because they have a stronger chance of breaking when packaged for delivery. Thanks in advance for your help!!

Yeah, sometimes long (and thin) cookies can bend as the icing dries. This seems to happen most often when the drying time is relatively long (as a result of the icing being too loose to start or the drying conditions being humid) or the cookies are too thinly rolled or not baked long enough. My guess is that the icing surface contracts some as it dries, which creates tension on the cookie, causing it to curve. I'd suggest using as thick a flood icing as possible, rolling your cookies thicker, and baking your cookies longer. Perhaps also quick-drying them in the dehydrator to set the icing faster. I have had that happen as well. It happened to long narrow cookies which I had rolled thinner than usual as well, but also large rectangular cookies, but again, I had rolled them thinner than usual. Usual is 6 mm think, thinner is 4 mm thick.

I have the problem every time I make Eiffel Tower cookies. They are very thin (the top was about 1 cm) and long and I think it is because of the shape. My cookies are always 4 mm but I never have the problem with other shapes.
Hi there! Try doing them of 8mm. If it is not that, perhaps you should take a look to your reciepe, perhaps it is too soft. Then let us know. Good luck, 300 are so much!!!
Speed setting the icing helps a LOT. 170* oven for about 6 minutes.
Hi Ladies! I successfully made all 300 California cookies for my bride and this order. I made them thicker and that worked... AND realized that my baking sheets were warping in the oven causing the cookies to bend! I now use aluminum half sheets with silpads and the result is perfection! Thank you for all your input. It feels great to have all of you to work these thing out with!
