Hi there!

 

I usually bake my cookies in a gas oven (gingerbread:7,5 minute, chocolate cookie: 10 minute) and bake them at 180°C.

 

Now for a couple of month I have to use an electric oven.

 

I tried to bake them the same way, but they did not turn out right

Any suggestion what I should change?

I would need more info to help troubleshoot in any meaningful way. For one, what do you mean by "did not turn out right?" Have you checked the temperature of both ovens, or calibrated them? It could be that though you're setting them at the same temperature, they're not actually running at the same temperature. But it could also be any number of other things - perhaps you made a measurement error in the batches that went in the electric oven? perhaps you changed ingredients? perhaps you baked more or less at one time?

Until now I was experimenting.

Seems that the problem was not the electric oven, but other things:

Trays, baking paper, and the humidity of this new flat.

I changed the tray, baking paper and added a tiny bit more flour to my recipes and now everything is how it was before .

Lesson learned: sometimes its the little things (like baking paper) that count!
