Need Gluten-Free Sugar Cookie Recipe

Looking for a good GF sugar cookie recipe that bakes up sturdy.  I need to be able to ship them to a friend for her birthday and they will be a delicate shape - this was her request - University of Alabama script letter A.  So far the ones I've tried have just fallen apart trying to work with them.  I really want to do these for her because she is largely responsible for my cookie-ing, as she surprised me with a Kitchen-Aid mixer for my birthday this year.  Any and all help, suggestions and experience are most appreciated.  Thanks!

For GF requests, I usually use and adapt the Bob's Red Mill Shortbread Cookie package (you can order it or some grocery stores sell it).
I found that out of the box, the recipe was too fragile and too dry after being baked. So I added an extra egg, an extra 1/2 cup of butter and an extra 1/4 cup of sugar and that did the trick. Not only did it keep them together well, it made the recipe DELICIOUS!

I used Fancy Flours No-Fail Sugar Cookie Recipe (http://www.fancyflours.com/pro...sic-recipes-and-tips) using Red Mills All-Purpose Gluten Free Flour Mix adding xanthan gum as directed on package with great results. The dough had a little bean-like aftertaste but after they were baked you couldn't tell the difference between my regular cookies and the gluten-free ones.  Tasted great!

Tailored Cookie, do you think the cookies could be used as cookie pops using this recipe? Does it make them 'strong' enough, and not crumbly? Did yours turn out crunchy or soft?

Actually, the other day, I did the recipe with an extra 2 eggs, 1/2 cup sugar and 3/4 butter and they were even better...I don't know if cookie pops would be a good idea without trying it out...Sorry that I am not more help...let us know if it works for you. Originally Posted by Erinlo Sew & So:

I was wondering if there is a recipe available for a good gluten-free cookie for those who do not live in the States? We do not have those mixes and some ingredients can be quite expensive. Can I just replace the flour with the almond meal?

I haven't tried baking gluten free, but have baked w almond meal and it does not behave like wheat flour at all. Maybe Kat from ibicci can help you as she is also in NZ.
