I have used a butter cookie recipe to decorated cookies. But I use chick pea flour instead of the all-purpose flour. Seems like is working. Someone has a different substitute that is not the gluten-free flour(Bob's Red Mill). I cannot find it here in Bangalore.

The chick pea flour it can be used but the flavor is like bitter so I am thinking to combine half of it with coconut powder. Has someone better ideas? I will appreciate if you share . . .

A few years ago I followed recipes for my daughter glutenfree and I used corn flour (not maizena) and maizena and almond flour.   Let me see if someone I know and is from India can answer this.

Well the people I asked didn't know.   But I when I started with the gluten free diet for my daughter, I must travel to other country to buy the food, now here we can find all.    Well you can use rice flour, tapioca flour, almond flour, cornflour,  arrowflour. You can buy special books with gluten free récipes or you can find free récipes  in internet.   I don't know if in your city or country  you can find a gluten free group of people, this groups help with tips, récipes and places where you can buy the food.

I found a really good mixture on the "Gluten Free on a Shoestring" website. They have a "mock" recipe based on Williams-Sonoma's Cup4Cup, but I like their "Better than" combo, which seems to produce a stronger (less fragile) cookie.  It is a mixture of white rice flour, brown rice flour, cornstarch, tapioca starch, potato starch, dry milk and xanthan gum.  I've used it in several roll-out cookie recipes and it works perfectly. I think chickpea flour tastes fishy (literally) and have searched high and low for good alternatives. This is the best I've found so far.  I'm not affiliated in any way with that website and hope it's okay to mention it.

King Arthur is one of my favorite gluten free flours to bake with as someone with a gluten sensitivity.  Also, I have baked with a combination of a few different flours.   Coconut flour needs another flour in it to hold together (arrowroot, almond).  I tend to use a gluten free flour so when using my regular clsugar cookie recipe all I need to do is substitute out the King Arthur flour.
