Thanks for the compliment!  I am not really sure how to make the slice look like birch.  To start, I would definitely make the center part lighter, more of a pale gold/ivory color rather than brown.  For the outer "bark" edge, maybe use white or pale gray with little painted strokes of darker gray or charcoal?  Maybe if you changed the angle, and do the cookie as if it were a 3/4 view instead of being viewed directly from above, then you could make the front part of the cookie look like birch bark?

Thank you so much, did you airbrush or just use royal icing and then the sugar on the edges. Also, was it just a circle cookie, or did you flute the edges to resemble tree bark? I'm sorry for all the questions, I've only done a bit of wet on wet and a wee bit of design on dried cookies. 
Any advise would be welcomed, it's for our friend's 25th wedding anniversary party in April, so I'd like to start experimenting now.

Don't apologize for questions - that's how I learned things too! 

It was just a circle cooke, no fluting.   I flooded the inner light brown part, then the brown outer ring, then airbrushed very lightly to give it some shading.  Then I piped a plain line around the edge and dipped the edge in crushed cookie crumbs.

Thanks for the kind words!  I used an edible marker for the rings.
