As a new member, I am so glad to participate in this challenge. Thank you so much Julia M.Usher and Christine Donndly for organising such an amazing challenge.
I am originally from Srilanka, currently based in Male', capital of beautiful Maldives.
I chose two countries for the challenge. Here I present China themed cookies.
For this set of cookies I was inspired by Chinese architecture, National flower (plum blossom),Yin and Yang (Good & Bad) symbol, Paper lanterns, Chinese hand fan, dumplings (xiaong bao) popular dish, Fish pond and Great wall of china. These are my free hand drawings/ piping on hand cut cookies.

This is a delightful set!  I love your original stylized drawings, and especially like how you sketched the Great Wall.  It can be so hard to take an image as complex as that and boil it down to its essential elements, and I think that cookie, especially does that perfectly.  I was just in China last month, and this set captures the spirit of that country quite well!
