Thanks, Dona - the snow is plain sugar (lots of it!).

Love these as well, Michele. Wondering if you can clarify how the SugarVeil was used here. Were the mats used for texturing the dough? or stenciling SugarVeil onto the dough (i.e., second tree)? Trying to get a sense of all the creative ways you've used the product here!  Thanks!

Thank you, Julia- in this case, the SugarVeil 'Grasses' Confectionery Mat was used to texture the cookie dough. Here are a few photos:

Roll the dough tightly onto/into the Grasses Mat.

Flip onto parchment, peel back the mat.

Cut the cookies into shapes and bake.

Add the SugarVeil Icing by piping detail atop the tree branches (here using the SugarVeil Icing Dispenser, but you can also use a parchment cone).

 

For the below tree, I simply smoothed a dollop of SugarVeil across the entire cookie, which filled all the debossed areas and quickly 'iced' the cookie:
