It's probably a combination of a few things.  The dough is a very stiff/hard gingerbread (construction grade), then I coated with an egg/milk/food coloring mixture and let dry. Then I covered with the corn syrup.  First I tried a corn syrup/vodka mix, but the coloring glaze is kind of oily and the vodka beaded. Then I brushed on straight corn syrup and placed in the dehydrator.  I did this process on the pieces before assembly.  It also probably helps that I live in a very low humidity area.

Interesting . . . so is it completely dry to the touch or a little tacky? Even fully dry corn syrup has gotten very tacky on me as soon as I've moved it into a less dry environment. The sugar absorbs the ambient moisture and reverts back to close to its original state.

I just touched the candle sticks and and they are still dry.  I made some mason jar cookies covered with a corn syrup/vodka mix last August and they are very hard now and still glossy.  (I still have them as they were a county fair entry).   Originally Posted by Julia M. Usher:

Hmm . . . must be very dry there. Where are you located?

I'm in southern Idaho.  It it dry here - high desert.
