For GF requests, I usually use and adapt the Bob's Red Mill Shortbread Cookie package (you can order it or some grocery stores sell it).
I found that out of the box, the recipe was too fragile and too dry after being baked. So I added an extra egg, an extra 1/2 cup of butter and an extra 1/4 cup of sugar and that did the trick. Not only did it keep them together well, it made the recipe DELICIOUS!
