Hello from sunny Phoenix, AZ... I typically roll out my dough on parchment, place the dough sheets in the freezer for 15 minutes-ish,  then cut my cookies and return the cut cookies back to the freezer until baking and re-roll the scrap dough to start the process again until all the dough has been used.  Just don't let your sheets become so frozen you can't get your cutter to cut the dough
