Suggestions Needed for How to Decorate a Logo Cookie

I am a beginner! My boss is retiring, and I thought it would be nice to make cookies with our company logo. I worked with a company to create a custom cookie cutter but now I'm not sure how to go about decorating the cookie. Fondant? Royal Icing? The letters should be blue with a white background. Any suggestions for a very determined beginner who has about a week to figure this all out would be greatly appreciated!
