Hello all - thanks for the thoughtful comments. I played around with various techniques this morning and I settled on using fondant for the background and royal icing for the letters (thanks Econlady ). I have about a week to work on my piping and cookie cutting skills. I plan on making 20 cookies for a party next Thursday.
I'm very appreciative for the advice and that I found a place to ask questions.
