Hi, @Carolyn G. If I look at the logo the first and easiest thing that comes to my mind is to decorate a cookie stick with a custom stencil of the logo.  So you just need to stencil the logo on the cookies flooded in white (once the icing is dry...).

But since you have already purchased the cookie cutter, and the embossed logo is already a decoration, I wouldn’t mind the naked cookies (no fondant nor royal icing). Maybe you could work to avoid to mishape the cookies by cutting the dough when is cold and firm. You'll want to do the cutting directly on parchment paper or a silicone baking mat, remove the excess dough and lift the mat or paper directly onto the cookie sheet for baking, without touching the cookies.

You might also be interested in this technique by Jinnee @Classic.Cookies. She just paints the embossing and leaves most of the cookie naked. Unfortunately I could find only one of her cookies here on the site (click here), as all her beautiful collection of cookies seems not to be in her “Content” anymore... maybe she could add her insight here...
