The technique I use in painting cookies is so similar to china/ porcelain painting which also requires a fine soft bristle to make smooth strokes and allow for nice blending of colors. A brush that maintains it's form is also good. FYI, a nice way to check a brush for that is dip it in water and flick the brush against your hand to shake off the water...if it held that perfect form, it's a nice brush! Hope this is helpful. 

 

By the way....Kim's work has been a real inspiration for me to pursue cookie painting.
