I freeze mine. So easy, and I find it doesn't affect the flavor or consistency at all. Even with extracts, just let it sit on the countertop and remix when thawed. Never run out, and not a drop wasted. I've had it frozen for up to 2.5 months - it might last even longer, but not sure. Good luck!
