What a difference a year makes!  Exactly one year ago I was in to week two of making 150 cookies for my local food distribution and the strawberry cookie almost derailed me.  I had so many missteps and wrong decisions.  This was last year's clip.

This year was the complete opposite.  Assembly was a breeze, I finished early and I even experimented with strawberry emulsion.  If you look closely, you can see a slight pink hue to the cookie.  I probably could have used more emulsion but I was unsure if there would be an after taste.  The emulsion smelled a bit like cough syrup.  The cookies however smell and taste like pop tarts.

You are so kind my friend. I tell you, the key to everything these days is a bit of planning and royal icing transfers. Truthfully, repetitive, easy piping helps me relax. When I start to feel too stressed or uncentered, I start piping transfers. Some days it’s an hour. Some days more. It adds up!. Not only does it calm me, it’s the gift that keeps giving!
