What a great idea about creating cookies of lime pie with the same flavorings . Lisa, @LisaF, you couldn't be more right about recognizing the importance of this day in history, 9/11! I also agree that during times of great sorrow for the nation, trying to bring some joy to others matters a lot. Maybe even more so on days such as this.

This week’s cookie was a challenge decoration wise because, as it turns out, key lime pies aren’t that interesting visually.  It just is what it is.  So, with that in mind, I decided to play with flavors.  As I have mentioned before, I have been using the flavor variations that Julia @Julia M. Usher recommends in her cook book.  They are always a hit and it gave me enough confidence to start experimenting on my own.  For this cookie, I used her modification as a guide and made lime ginger cookies with a hint of salt.  I used fresh lime zest and lime extract in the dough and key lime extract in the icing.  It worked! The cookies actually taste like lime! So that is small victory this week.  Plus, I used the airbrush in two places on the cookie and there were no explosions and only minor mishaps. 

I had mixed feelings about posting today.  With all of the horrible headlines, devastation in California and this being September 11th, my cookie odyssey seems silly in comparison – even if they are donated to people in need.  But I thought about something I was told many moons ago by someone older and much wiser than me.  She said, “Some days there is joy. Some days there is sorrow. And some days there is pie.” I guess this is one of those days.
