I'm wondering what any of you do that require you to make cookies in very large quantity for storage. I had a large order to complete and have been keeping it in very large flat rubbermaid containers to keep them fresh and avoid exposure to air time...yet there are multiple steps involved that require me to take the cookies out into the air to complete another process to them.  Can anyone tell me how they handle large orders like this? I put them in front of fan for fast drying time and put them right back into container...but wondering if the fan dries them out?  Obviously I want them as fresh as possible...help???

Royal icing keeps cookies surprisingly fresh even when they are not stored in air tight containers. When working on a big order, I keep cookies in containers before they are iced and if they are completely dry and it will be overnight before I can add more details to them, but otherwise they sit uncovered on cookie sheets. 

I was wondering the same thing as I have an order for cookie pops, and ofc with the sticks on them, it makes it impossible to find anything they will actually fit in before I start to flood them tomorrow - L.E.E. thc for the tip, just found the trays on amazon and going to order them immediately!! - here's the link for anyone else interested
