I haven't decorated on the baked side, but I always flip my cookies over for a couple of seconds right out of the oven while still hot-provided the cookie shape isn't too delicate to handle right away.

It works to flatten out any bumps perfectly!

Never thought of that. Next time my cookies aren't flat I'll give it a try.  Thanks!

Whenever I have cookies that are oriented one way (like witches boots or Christmas stockings,) I flip a couple of them so that I have some going one way, and others going the other way. That way, I can have "pairs" of boots or mittens to display, if I want to. It has always worked out great for me to do so.

yes, but I do not like it at all.   Baking side is a porous surfice. When I do that I use a thick consistency to patch holes first.    I had made in the past cookie bones and I used a thick consistensy applied with a brush because I wanted  to cover the entire cookie but with a rough finish.    I have cover the entire cookie with chocolate too.

I do the same thing

I started decorating the underside of cookies when I noticed this was being done on a Montreal Confections video and it works well for me. I have much less inadvertent run off of flood icing since I changed to this method a few years ago.
