Is your dough recipe formulated in such a way that it doesn't spread (like AT ALL)? Your cookies are always in such perfectly aligned stacks.

Our recipe has very little sugar in it, for the European taste, American cookies are too sweet sometimes ha, ha, ha...But mostly, the key is the dough temperature when you roll it out, cut it and when you introduce the cookies in the oven. Ah! and getting along very well with your oven. That's essential! ha, ha, ha.
