A heat sealer will seal the bag but there is still air in the bag. Some people will shrink wrap their cookies but that's another conversation!!!
I use a heat sealer and my cookies stay fresh for at least several weeks. I have also put the heat sealed decorated cookies in a container and froze them. Hopefully this helps you out.
I use a food saver. It draws the air out of the bag and then heat seals the bag. It doesn't heat anything inside the bag. You can also use it to just seal the bag.

I do exactly the same thing and have found that when the cookies are thawed they taste as fresh as if you had just decorated them. Wouldn't preserve my cookies any other way, especially with a larger order that may take at least 2 weeks for me to complete. (I'm handicapped and am unable to work nearly as fast as I used to when I decorated cakes and did floral design work.)
