Lol How many cookies do you mean by big? If I have an order for over 200 cookies, I usually request the help of other people. It's easy to get people that can flood a cookie, so for instances when I get an order for 200+ cookies, it requires more planning, per se, vs. an order for 24 cookies. We typically make batter twice a month and freeze it in batches, but if we didn't, it would go something like this:

Day 1 - Make Batter and Freeze (so the batter is as cold as possible for baking); Day 2 - Defrost batter for 30 minutes and run it through our dough sheeter (the new love of my life!) OR hand roll out the cookies, cut cookies, bake;

Day 3 - Prepare the fresh frosting (usually a MINIMUM of an hour to mix and bag the colors), pipe cookies & flood (I usually pipe all of the designs and then the people I use to help on big orders can easily flood my piped designs)

Day 4 - Pipe/Flood any details that need to go on top of the flooded cookies, let dry completely

Day 5 - Package

 

So, as you see, large orders take a little (ha.ha.) more time, but if you have an idea of how long it takes, it's easier to guestimate your order time and schedule. I do have a "production schedule" that I use on an Excel Spreadsheet that I use by month. When orders come in, they can be added to the production schedule with out being forgotten and it really helps with planning future orders.

 

And then you'll get a customer that tells you it shouldn't take that long to "make a few cookies..." and you'll sigh because you know they'll never understand the tedious procedure to making their beautiful cookies for their event!

 

But, my advise is, when you have larger orders, always seek the help of someone else, as a team effort is always FASTER and much less draining on yourself! Hope this helps!! Getting busy can be totally draining if you don't have a little help...so at first, I would seek the help of anyone offering!! Best to you!!

I made 250 cookies by myself and it took me 5 days plus a full night for packaging!Unfortunately, I don't trust other people to do something for me, that I have to change!

It is SOOOO hard to give up control about letting someone else participate in your cookie endeavors, but trust me, you'll thank yourself when you're able to sleep at night, vs. staying up all night to get everything done yourself. Baby steps...maybe have someone help you package?

Do what you can and grab help for other things. I did a huge order of 750 favors for a fundraiser and did what I could, then grabbed my local youth group to help me bag and bow them..they were grateful for free pizza, pop and brownies!! Those that could bag, I grabbed gloves for them and let them bag away, and then I hand picked gals that could do the tying bows...I'm picky about that

I did 6000 cookies a couple years  back partnered with a friend. It took about 3 weeks. Lots of shuffling to and from the freezer. It averaged between 300-500 cookies per day. After several hundred, you learn to let go of some things. There's no way I could have done it without several baker's racks. Now an order for 750 cookies is nothing LOL!
