I'm facing a problem during the drying process with my cookies . . . I'm using air conditioner to dry my cookies, and the royal icing crack during this process.

I'm not moving the cookie during the drying process.

Also, this appears more when I do large cookies.

How to avoid that? My icing receipt is with meringue powder.

Yes, you are right. It beije today, when I started to do the 3D decoration..... It didn’t have anything at back indicating problema.... but, as I told..... It broke.....

I have a 3D project with large cookies.... let”s see how It will work.....

Sorry it broke.  You may be under baking or over baking your cookies.  I was taught to bake if any of the cookies I have a light brown edge, pull them out and cool completely.  Good luck!

Hello Dani,
if that only happens with big cookies, I suppose it's similar to a masonry. the edge dries faster than the inside. To avoid this, water is sprayed on again and again.

Maybe it's similar here? Maybe it should dry more slowly? To keep the big cookie wet longer, I would probably try to put it in the freezer for a while. If you flooded it with RI when frozen, the RI stays wet longer (due to condensation).

Would be worth a try?  @Dani Matos
