I will be doing an online business real soon. There will also be a local store opening soon in my area, so I will be putting some of my cookies in the store. My question is: what is the best way to keep a cookie fresh for store sales? The size of the cookie will be 4x6 inches. The cookie will have royal icing on it. Can I wrap the cookie in a food-safe sealed plastic bag? Can it be refrigerated? I will be making them for the holidays, and they will be pre-ordered. Thank you.

I’m terms of keeping your cookies fresh, it does depend on the type. Mine are quite crunchy and need to be kept dry rather than moist, and that means kept airtight they’re good for a few weeks. But moist chewier cookies would be more likely to develop mould. I know many cookiers have had success freezing iced cookies. Royal icing will keep forever if dry. 

Hello I just made 300 cookies for a church camp it was a donation so I figured I could play around with freezing and bagging and figure out what works best... I started three months before they needed the cookies I decorated them put them in bags with ties and then put those cookies inside of plastic containers, I ran out of plastic containers so I put 150 in cardboard boxes in the freezer I tested them after three months they were delicious! Note take them out of the freezer a day before and don’t open the container (no condensation)🤗
