Is there a softer royal icing recipe out there? Maybe it’s my error, but my icing is really hard. Does over mixing it make it harder? Could the amount of meringue powder be reduced to help soften it up? I use a Tablespoon of corn syrup in my recipe, can I add more to help with the issue?  It also seems that sometimes it turns out harder than other times even though it’s the same recipe. Help!

I’m not sure what to tell you.  I use genies meringue powder and recipe on it.  Mine is firm, but it breaks easily.  You might check out frankenfrosting which is a combo of glaze and royal icing.  I have a friend who swears by buttercream and outs more meringue powder in it to get it hard.  That said she doesn’t do painting or anything beyond basics.  Good luck.

Check out the blog post about corn syrup on this site in the “Toolbox Talk” category. It basically shows that adding a bit of glycerin to your icing has more of a softening effect than corn syrup. And like Kate said, you could always make a blend of confectioner’s icing and royal icing.
