Hello everyone,

 

I recently had a problem flooding my cookies. It was not the typical air bubble but some waves.

 

I would like to know what you think about it. I used a 10 seconds royal icing, let them dry overnight, no fan.

I had this happen only one time...it was during winter, the central heat was on, and I moved the cookie rack in range of the vent of the heater...when I came in the following morning, I had a heart attack! It happend to the top three sheets (about 75 cookies - the ones that were closest to the vent -- we're still talking maybe 8 feet away) and the lower sheets had slight rippling and the very bottoms sheets were fine.

 

I assume that they are drying very quickly...I assume that if the air is dryer that might be a possiblity...the RI is drying much quicker than with more humidity.

This is the second time that it happened to me!!. I live in Florida and the weather is starting to change. I had the A/C during the night and the cookies inside an airtight container, so no chance for heating air, but I moved them from one place to another too soon.  I also used a parchment cone to work with, i think i cut the end too big. It's curious but half of my cookies dried pretty well. 

Yes, you really shouldn't cover cookies until they are dry. Closing them up will slow down drying time and cause the cookie to soften and the icing to potentially wave/change shape.
