CK Meringue Powder

Asmita
Hi, I am having issues since the last couple of days with my royal icing. I always use CK brand and use the same recipe and never had a problem like this. When the icing is mixed, I see beige dots or pieces through out the icing and when I try to pipe, it gets stuck in my tips. They are tiny but never before has this happened. Anyone experienced this before or what am I doing wrong? Thanks AsmitaRead More...

Say Hello to Our February Site Artist

Julia M. Usher
It's nearly February 1, and Valentine's Day is just around the corner, so what better time to insert some love-themed cookies into our site banner and backdrop?! I'm especially fond of these rustic hearts, wreaths, and flower plaques created by the very talented @GinkgoWerkstatt, aka Anne Lindemann. Their departure from normal lacy red and pink valentines makes them all the more interesting to me. And the neutral, wood-grain background really makes their foreground elements...Read More...

Greetings from France!

Annelise (Le bois meslé)
Hi there! I am a French archaeologist and discovered cookie decorating very recently, less than a month ago. I actually wanted to bake a thematic cake for my best friend's PhD defense, and while looking up designs online, found some incredible buttercream piping. I really wanted to try my hand at it, but I HATE buttercream with a passion, so I looked up alternatives and found cookie decorating, which I had literally never heard of before. A look at one of Julia's videos, and the revelation...Read More...

Order for Two Thousand - HELP with Pricing!

Forum: Pricing
NOMI
Hello!! Hopefully someone will see this and maybe have some advice for me! I recently received a potential order of 2,000 cookies for a large, well known store. Their marketing specialist has contacted me in regards to 2,000 cookies. They will all be round and with a white (maybe black too) base with a gold logo detail. This equals to about 167 dozen cookies. I'm slowly realizing my worth and do not want to lose myself if I'm chosen by this client, but of course this order is so large, I...Read More...

Hi, all! As any site gets big and draws a lot of traffic, it becomes a target for spam, questionable members, and unwanted emails from said members. In fact, since Christmas, the incidence of spam members has increased quite a lot despite our very rigorous spam filters. As a result, I now review every new member who joins the site , and I actively delete those who appear to be here for purposes of spreading spam or making unwanted advances to other members. Today, I have already deleted...Read More...

Color from Icing on Lips and Mouth

Hi there. I have problem. I want to know what you all can suggest. As long as I've been working in this business, I just got a complaint from one of my customers. She sent me a pic (which I attached here) that her kid ate my cookies, and all the icing color got stuck on the lips and tongue. She had to wash twice to clean it. She was afraid that I’m using cheap colors that have an effect like that. I explained that it's ok because I'm using food-grade color. I’m here to ask: is all coloring...Read More...

Hello from Norway

Snufs
Hello from Norway! I have a friend from the US who every Christmas has been nagging me to make sugar cookies. She has been asking over and over and over, "please make some for Christmas; they remind me of my childhood". I have never had time for it, and didn't know what treasure it was. For me it was just a cookie until I began to look at them on Pinterest. Ohh me ohh my - did I get a new hobby. Yes I did. As you can see I'm a beginner, and I want to learn. In general, I work with...Read More...

Chocolate Chip Cookie Recipe

Kimberlie
I want to use chocolate chip cookies on a platter as a filler. I’ve never made my own till now. Go figure! I’ve tried recipes and all of them flatten. I’m looking for one that will stay puffed up and not spread too much and have a nice golden top on it. For those of you in the States, I would compare it to a Sam’s Club chocolate chip cookie. I’m not great with the science of baking, so if anyone here could share a recipe with me, I would be very grateful.Read More...

Food Coloring for Rubber-Stamping

Gingerland
Hello, everyone, I need some advice regarding what food coloring to use for rubber-stamping. I just started to experiment with clear stamps; they are working fine, but the color I use never seems to dry. Even after one day, they are still smudgy. Until now, I was using gel colors (different brands) with the same result. I also tried liquid colors too, but they did not work well. Should I try airbrush colors? Are they drying quicker? I was wondering what kind you guys are using to dry...Read More...

Cleaning the Schmutz Off Isomalt?

(This question is not about cleaning isomalt off of things -- I find that soaking my pan and spoon in hot water and soap takes care of that quickly.) My question is: if you need to clean fingerprints or smudges of royal icing or smears of color off of isomalt, how do you do it? I am dealing with pieces of isomalt that are pretty small and I could not use (even if I had one) a propane torch on them, as I have seen suggested. I'm loathe to use water, even with isomalt's low/non-hygroscopic...Read More...
