To me this definitely looks like it was brought together after baking. An opening cut should not be enough. I think that a heart of it was separated and baked in the middle and then "only" the interface was straightened and glued together. I think that's a really cool idea! Especially when the hearts are connected, then to provide one heart with icing ...! She could also have placed it on something so that she got a flat surface and the already finished heart somehow "hung" down. With this one the icing was already fixed.
At least that's how I would want to approach the matter: Could it be a topic for the challenge ?!
