I used a stencil and a sponge and green food color gel. I had previously made white royal icing circles - so I painted the stencil on the RI transfers and then dropped them on my brown part while wet.

Thanks for the clarification - I'm adding this image to the stenciling clip set. Also, adding some clarifying tags. Be sure in the future to select some clip sets and tags that describe the techniques used in your cookies, as well as the occasion for them. They'll help readers who are trying to figure out how cookies were made; plus, they'll make your images more find-able.
