Hi Tina@SugarWishes,

I freeze all my cookies before separating the cut outs from scrap dough. You are looking at a "STAGED" photo. These are frozen.

After rolling and cutting I drag the wax paper with the cut outs onto a cookie sheet and put them in the freezer for about 10 minutes and then separate for nice clean edges.

Place them on parchment paper while still firm until you have a whole sheet ready to put in the oven, straight from the freezer.

Yes they hold their shape better.
