Laegwen, your comment made me laugh so hard! This is actually made up of three cookies, a sharp paring knife and patience. I will post more details shortly.
Now YOU have made me laugh! I especially loved step 4 - sounds very realistic (and appeals to my better half...).
I never thought it might be an optical illusion, I was wondering for hours how you prevented the cookies from simply flattening out while being baked in this bizarre construction.

To show that I haven't broken any laws of physics, here is my step-by-step guide for this cookie:
Step 1. Bake three cookies in the shapes shown in the small image attached. I coloured some of my dough for more definition.
Step 2. Now, go and bake nine more of these sets. Trust me.
Step 3. When the cookies have cooled, use a paring knife, or similar, to narrow each cookie and widen their centres.
Step 4. Eat the 27 cookies that broke during step 3.
Step 5. Assemble the puzzle with the surviving three cookies as shown below.
Step 4 is awesome! I once made a cake with ice cream cones on the sides. The sugar cones needed to be cut in half. I needed a whole box to get the 5 good ones I needed! The broken ones made great snacks!
