It's isomalt, a kind of sugar which can be melted in the microwave and moulded into stuff. It's the first time I've tried it. The droplets are staying hard but with a slightly sticky layer over. I'm just hoping they won't detach from the cookies!
Hi. I had the kind of isomalt that comes in little nuggets for heating in the microwave. I put just one in a silicon egg poaching pouch and heated it at ten second intervals until it was liquid. I then used a toothpick to drop it onto the cookies, but it thickened up quickly and I had to keep popping it back in the microwave for a few seconds to stop it just forming long sugar threads when I tried to drop it onto the cookie. Gradually it turned a little yellow doing this.
