Hi, Jinnee - The bat is royal icing.  Believe it or not, it's really easy to make! Pipe two wings onto wax or parchment paper - allow to dry completely (I allow a minimum of two days - just to be sure) and then remove from paper carefully and "glue" onto the cookie with more royal icing (to create the body).   I got REAL lucky with the bat feet - they didn't break when I piped them with a #1 tip!

Sorry it took me so long to answer this question, I'm still trying to figure out how to navigate through the site - not that it is hard, I'm just not on long enough!   Also - to answer your other question about the background of the sleigh cookie (I think you asked . . .) the background is gold luster dust.   One of the things I wanted to try this year was to work with "metallic" food coloring - especially for Christmas.   All I know at this point is that is has to be painted on with alcohol - I haven't done too much experimenting with it - but certainly love the look enough to want to do more!
