Surprise! This video is a departure for me! I'm not decorating or baking here, but rather testing a brand-new all-natural food coloring - TruColor gel coloring - a healthier alternative to artificial coloring.
TruColor aims to resolve two common complaints with existing natural food colorings: weak coloring intensity and limited shelf life. In the video, you'll see how TruColor stacks up in royal icing against leading brands of both natural and artificial color (India Tree and Chefmaster, respectively). In addition to testing shelf life and color intensity, I compare these three products on four other dimensions: 1. ease of mixing, 2. range of colors, 3. stability, and 4. price. Along the way, I share formulas for hydrating the TruColor powders and discuss the effects of acidity on natural colors.

I also use well water.
You can use it even if you have acid in your icing; it's just that the colors will likely show very differently if there is acid in the icing. Blues become more pink, primarily.

Yes, definitely a safer alternative. I didn't comment much on that variable in the testing simply because it's nothing I am qualified or able to test, but it's an important consideration in deciding whether to use artificial or natural colors.
Julia thanks so much for for the video I received my True Colors but I've just been dragging my feet to start using. Now I fell better about it. Would you consider a video for the air brush colors thank.

Yes, I've got another one in the works first though about how the colors perform in buttercream.
