This idea never even crossed my mind and I doubt that it is necessary, at least not with the cookies I bake. I also don't wait any longer than they need to cool, as they are completely dry and crispy almost instantly.

I use a sugar cookie recipie, slightly adjusted to my personal dough preference. What kind of cookies do you make? Maybe dehydrating them before icing would come handy with soft and chewy ones? But then again, they would neither be soft nor chewy afterwards...

Thanks  Laegwen. Never thought of that! Idid try it and they are not ot as soft and chewy as usual, but still somewhat with a slight crunch Around the edges. I always read to leave them to dry for several hours before flooding. Now I am wondering why. My butter cookie recipe contains heavy cream so it is softer than most.

I've never bought into the need to let cookies dry before icing the either - I ice as soon as they're cool and don't have trouble with icing discoloration. But my cookies are more crunchy than soft.

I like soft-ish cookies, and decorating right away works for me too. Some people say you need to wait or the butter/fats in the cookie will be absorbed into the icing and leave off-color patches. I never have a problem. However, I do try to get my icing to dry quickly which may help prevent it. I place them on a cookie tray in a barely warm oven, with a small clip-on fan attached to the handle of the open door for circulation.
