Whenever I'm doing an intricate font I mix a special black (erm, whatever color you plan to use) with an extra spoonful of powdered sugar.

But! I'm sure someone with more technical knowledge can come around and help you out!

Icing should be like toothpaste consistency. Use a fine tip, like a PME 1. Practice a little on a towel to get the pressue right. This was one of the hardest things for me. I either squeezed to hard or not enough.

Hope this helps!

HI Maria!

I like, Butterwinks, add a smidgen of powdered sugar to get my consistency like that of toothpaste. I also practice on wax paper writing out the words so I can get the pressure correct.

Practice makes perfect...or so I'm told!! I'm usually in too big of a yank and not patient enough and end up w/ icing that is too runny or soft...I've learned the hard way of having to take it "back" out of the bag...and add more sugar until it's the right consistency...

I often end up with too thin icing for lettering. A true 20 sec icing about right- stiff consistency works if you are doing small letters. For lettering I'd rather tease out a few peaks than chase after spreading letters, if that makes any sense. And definitely practice helps. The last set I piped was the first time I felt like I got it right!
