I live in SC where the weather has changed in dramatic swings for a couple of weeks now. For example, it was in the 50°'s a few days ago and today it's a VERY wet, humid 79°! I write all this to say that I had decorated a few last minute cookies and used the dehydrator for a few hours to help with the humidity as I normally do. I turned it off and left them inside overnight. This morning the icing was discolored in places. And also darkened up quite a bit. I've never had this happen. Any ideas?

I've had that happen and I hate it. It seems, fir me, it only happens when I use the oven or dehydrator. If I just let them dry naturally I rarely have that trouble.
Is it only with red and blue? All of my red cookies went blotchy I had some issues with white as well, but not wit any other colour!
i'll take a stab at it more comments are welcomed too i have never had this problem i don't have a dehydrator never put in oven to dry i use a cookie grid to air dry was your butter too hot did you chill cookie cut outs before baking were they too air temp when you baked did you use a higher fat content butter (is that how its said?) did you over beat your butter/sugar
after baking put on an open cookie grid use a fan to dry both sides i have seen my cookies look 'wet' on the bottom flipped them over and for about 15 minutes air dry time then put the fan on them
The last time I had discoloration it was with ivory (with a touch of brown in it). It was a test cookie. The next time I made it, no dehydrator or oven and no discoloration. Last summer I had it happen on some starfish colored ivory that became discoloed. Outside it was muggy and there was smoke in the air. Luckily, because it was starfish everyone thought I did it on purpose.
Ever since I started coloring my icing white, during the making of it, I haven't had any discoloration issues. I also dry my cookies with a fan or heater, depending on the weather.
