When fulfilling an order, how many (if any) extra of each type of cookie do you make? Inevitably I'll royally (pun intended) screw up a couple in every batch, but I don't want to over do it and waste dough.

In the beginning, I did at least three and always had so many left over ... now I only do one or two because I fear dropping during packaging or worse yet, throwing one across the counter (I've done it before)
I've been doing 2 extra of each - seems to work out well. Knock on wood - so far I have not needed more than that.
I don't make extras lol I've never needed any
1...sometimes none...but if it has writing, I usually make at least 1.
I like to have at least one extra of each shape in case of extreme mistakes or disaster caused by my clumsiness (ie dropping the cookie or dropping something ON the cookie)
Always at least 1 of each design - depending on how much actual planning I did. I'm not a great planner! I usually need at least one practice cookie before I know exactly what I want to do
If I'm doing a new technique, I make extras for practice (and my husband and son get to eat the "trials"). I broke a big plaque cookie just this week and was grateful I had extras.
It depends on the design...if I have to 'center' something or draw something freehand I may make 1-2 extra. If it's a straightforward design like a flower, then I usually don't do extras.
If i am making a big 'cake topper' type biscuit, with a short window of time - i always make 2 & do the flooding on both... then focus on the one i like the most when they have both dried... The details tend to dry quickly, so i know if worst comes to worst - i have a back up if i do something silly.
With all other biscuits i tend not to make extras - but - i always have enough dough in each batch to make one or 2 more biscuits. These get cling wrapped & put in the freezer.
If (touch wood) ive not had to make any extras (ie... not made any mistakes) the biscuit dough gets used for 'singles' or 'minis'... I have this thing about all my biscuits coming from the same batch mix... so couldn't bring myself to make a big order from 20 frozen 'batches' :/
