Quick & Easy Rectangle Cookies

I recently needed to make some rectangle cookies but I did not have the correct size of cutter. I also did not want to hand cut them! So I had an "ah ha" moment that is very obvious and one that most of you probably already figured out. But I decided to post it just in case.

I needed to make 1.5" x 2.5" cookies that I would then ice and place a chocolate plaque on top. I made a 1.5" x 11" template (I recycle the plastic fronts of my husband's holiday booze sets for templates...they work great!). After rolling out my dough and cutting strips with the template, I used a 2.5" square cutter to make 4 cookies per strip. It worked quick & perfect! You can make any size rectangle this way, as long as you cut a strip that is the size of the smallest side of the rectangle and have a cutter that measures the same as the longest side.

As I said, an obvious solution. But it made me happy and I wanted to share!
