If this has been answered somewhere else, please let me know. I couldn’t find an answer when I searched.  

In the last week, I have had 2 sets of cookies that have not dried completely. They look dry and feel dry to the touch but when I go to stack them or write on them with the edible marker they cave and “smoosh”, and it seems as though the icing underneath is still super wet. I can’t figure out what all the sudden is going wrong?! Any help?

Hard to say without more information. Have you changed your recipe or meringue powder? Have you changed your drying conditions? Have you added any whitener to the icing (I find it delays drying)? Has it been extra humid? Any one of these factors could cause delayed drying, so you may need to analyze what you may have done or experienced differently this time.
