On my first visit to Costa Rica, the moment I heard the phrase most oft repeated there "Pura Vida" (pure life), I fell in love with this beautiful nation. This cookie may be a bit simple for the texture challenge, but there are certainly textures. The sand is a combination of tan cookie shavings, brown sanding sugar, white sanding sugar and gold sanding sugar. The rocks are chocolate rocks. The flip flops are royal icing transfers. I let the sand icing dry a bit before I spent some time making sure the sand writing would be visible. To help see it, I also painted a light brown shadow in the creases of the words. The surf was highlighted with a sparkling gel down into the the initial dribble of water in the "P". I love this cookie, it makes me feel back on the beach in Costa Rica again!
