I am trying to come up with a tried and true cookie using Splenda. I have tried a few quick breads and can't get the texture right. I have had a lot of requests for sugar free items. Any suggestions?

Do you have to use Splenda or an artificial sweetener? Or are people just looking for cookies without refined sugar? There are other natural sweeteners that could work well.
Any kind of sweetener would work. My mom has to to eat sugar free so I am trying my recipes on her first. I have had a lot of request for these products and I hate to leave them out.
It would be really great to find an "edible" decorate-able cookie using a non-sugar sweetener for those with diabetes.

I would never use Splenda... opt instead for a safe option.. xylitol, stevia, and erythritol are all good choices... my preference is to use a blend of all of those... I ONLY bake low carb keto, sugar free, gluten free baked goods
