Hi, all, I had every intention of getting to the Spotlight tonight, but today was a prep day for my hands-on classes here in Brazil over the next few days. Prep was pretty intense (I single-handedly mixed over 18 kilos of icing, among other things), and I need to get some shut-eye before class tomorrow, So, long story short . . . unfortunately, the Spotlight needs to give.
HOWEVER . . . my hope is to replace this weekend's Spotlight a little later this week (Sunday, Monday, or Tuesday, depending on my class schedule) with something possibly even better: a feature of the cookie winner in the Cake Masters Magazine Awards, being announced tonight in Birmingham, England. (I'm watching the Cake Masters live Twitter feed from the event as we speak, and I see no cookie news yet!)
