Hi! Does anyone have a preference on silicone baking mats? We've been using parchment paper and want to switch, but seeing as how the silicone mats are not that cheap, I want to be sure to get a good, durable quality. Thanks!

Hi, it's me again, for real this time. I can't say I really have a preference (as most mats seem very similar in thickness and quality), but most of mine are Paderno brand and I've gotten years of use out of them. They discolor over time, but they still work just fine.
I love Silpain mats. They are not cheap but I've used mine for more than 4 years and still work fine. Silpan allow steam and extra fat to escape so you can bake crispy and flat cookies.
