Hi, @TheMuffinMan, welcome to Cookie Connection! I hope you enjoy the site. We're primarily a group of cookie decorators, but we also know a bit about baking! Most commercial bakeries use dishers (aka scoops) of various sizes to consistently portion batters for muffins and dough for drop cookies. Generally, the higher the number on the disher, the smaller its size. I've used ones in the #40-#60 range in the past for drop cookies, but the size you choose depends, of course, on the nature of your dough/batter (how thick it is and how much it spreads) and how large you want your cookies to ultimately be. This site has a broad selection of dishers, though there are many online sources and probably wholesale/restaurant supply shops in your area from which you can source them more cheaply. Best of luck.
