I make a lot of Polish food. Our family is mostly in Toruń which is famous for its pierniki, so pierniki are my "challenge". I was doing really well till I found out I'm coeliac and had to convert the recipes I use to gluten free. The only loss is that I can no longer make mounded pierniki (which is a shame because I even made some of my own moulds!) but I've seen the most beautiful iced pierniki on Polish and Russian websites and I would really like to learn how to do that.
