This is 3 tiers of 1/4 inch cookies. The total size of this cookie cake is approx 2 1/2" by 2 1/2". Amazing how only thin royal icing string is keeping these cookies upright!!
HI Heidi, I first cut a small piece of sponge and set second cookie on top of the first. Begin piping strings but don't pipe all away around. Leave a big enough gap so the sponge will slide out once string is dry. It only takes about 20 minutes to dry. Then fill in gap with remaining string. You do the same for 3rd layer. It is amazing to think this holds all three layers. It took many practices to figure out all the logistics that go into this. Like how many strings to use around the cookies to give enough strength without looking like a mess. My next challenge with this is to make the layers look like a carousal and use fondant for the horses. I'll let you know how THIS turns out!!
