I don't se to be on the photo with my creation but I did exception,so hope you forgive me!This christmas gingerbread tree was created for a special Christmas in Candyland Collaboration hosted by@Ella Din-Diney Hidalgo.

What is different in this creation?Finaly after 2 years I did again another experiment with stiff royal icing CMC and a bit Crisco which did the huge difference,most of decoration on this tree is exactly from this modeling royal icing!I am very happy for result,For decor I us also royal ixing transfers as gingerbread men,snow balls,snow small hils,candycanes

Pretty! Can you explain a bit more about "modeling royal icing"? For instance, how did you mix it (proportions of ingredients), and which particular elements on your tree were made with it? And how did you shape it (in molds, piped, hand-shaped or modeled, etc.)? I just don't think everyone is familiar with this term, and answers to these questions could be great teaching points. TIA.

So finally coming back with how to make this modelable royal icing

maybe you will be disappointed but this is it

When I realize that this is quite close to flowerpaste of chef Nicholas I said what???Because that recipe I knew a couple of years! Maybe close same ingredients but different dosages-analogies

Make a stiff icing  put 300gr powder sugar in your mixer bowl you can use wilton ready mixture for royal icing you need 2 big Spoons we use for soup,subsequently mix put 1 tea spoon Cream of Tartar or white vinegar  and after 1 tea spoon corn syrup & only a little bit water around 30ml/maybe you will need 10ml more/ .You can use aroma flavour but in case you want the mass pure white add  without colour ,so in no case vanilla aroma.On the end add 1alignment /exact/soup spoon

CMC or Tylose ,use for your hands grease best something like CRISCO and in case on your working desk a bit of corn starch.You can easily color this mass  it is looking like a clay .You can hand  model or use silicone molds like easy way,it dry very fast ,holding shape and glue on your cookie with middle to stiff consistency of  regular royal icing.

or you can make a very stiff icing and you use only powdered sugar and just a bit corn starch but I prefer it with CMC becouse it dry very fast,don't forget to keep it in bag very good packed
