Why do you roll it so thin ? Does it make a bit fragile ? especially since there is not royal icing to make it more sturdy ! I prefer to make my cookie cottage with butter cookie dough because the molasse makes the cookie too soft.
Quite on the contrary - the finished pieces get very sturdy when baked and cooled. I roll them thin to avoid that the pieces float and change shape while in the oven. Maybe the cookies get softer if they are thicker? Give it a try!
Splendid! I've never been shown/instructed to roll thin. I never liked the fullness of the pieces. I would always shave the pieces. With cookies (not for houses) I smooth over and press down with a fondant smoother. How did you get the watery effect for under the swan? Bravooooooo!
